A Commis III is a line cook who prepares, cooks, and serves food in a professional kitchen setting. Their responsibilities include:
- Food preparation: Preparing ingredients, cooking food, and plating it to high standards
- Kitchen safety: Ensuring the kitchen is safe and free of hazards, and that equipment is in working order
- Stock management: Monitoring stock levels and ordering supplies for their section
- Daily procedures: Carrying out daily and weekly tasks, such as temperature checks, food labeling, and storage
- Kitchen maintenance: Cleaning and restocking kitchen equipment, and setting up and breaking down work stations
- Communication: Communicating with the kitchen team to ensure smooth service
- Teamwork: Working well with others, and supporting the team to achieve common goals
- Training: Attending pre-meal briefings, de-briefings, and other training sessions
